Blending & Taste

We have a founding member of the University of California at Davis' Taste Panel on staff at Sylverleaf. He is a highly trained professional taster who is available to consult with you on the complete spectrum of organoleptic qualities of olive oil. If you have a particular flavor profile in mind, Sylverleaf can help you to develop that profile through varietal selection, blending methods and horticultural practices. Just like wine, the flavor, mouthfeel and smell of olive oil can be manipulated to produce a unique and interesting product. We are able to provide this service to those looking to enter the olive oil business and to those already in the business that would like to take their product to the next level.

Horticultural Practices

Making olive oil is not as simple as harvesting the olives, milling them, then putting the oil into a bottle. Olive oil truly begins with the trees in the orchard. The noble olive tree requires an appropriate site, the correct mix of nutrients, ample water and correct pruning. As the olives begin to mature on the tree, they must be protected from various diseases and pests if they are to be of the highest quality. Then, if all of these steps are taken cautiously, the fruit must be harvested and milled correctly. The timing of the harvest and the handling of the harvested fruit are two of the most neglected and least appreciated steps in the process of making olive oil. We have experience with rejuvenating an old (104 years old) and long-neglected orchard and with the care and propagation of young trees as well. Sylverleaf does all of the orchard floor preparation, irrigation and pruning in our orchards. We don't hire outside crews to come onto our farm to care for the land, we do it ourselves. That experience has placed us in a unique position within this industry. We also have a certified pesticide applicator on staff who can recommend the best course of action if you have pests and diseases in your orchards or if you would like to keep them out. Sylverleaf is also certified by CCOF as an organic farm and can offer advice when you're considering this endeavor.

Organic Certification Advisement

Bottling & Labeling

We are a certified organic handler who can bottle and label your olive oil (organic or conventional) in our state of the art bottling facility. Sylverleaf also offers certified organic olive oil storage on a limited basis. For either of these services, please contact us well in advance so that we can prepare our facilities and complete the requisite paperwork.
