Thai Tilapia
Serves 2

Ingredients:
- 2 teaspoons dark sesame oil, divided
- 2 teaspoons Sylverleaf olive oil, divided
- 3 pounds white fish
- 2 cups red bell pepper, chopped
- 2 cups green onions, chopped
- 4 teaspoons fresh ginger, peeled and minced
- 4 garlic cloves, minced
- 2 teaspoons ground cumin
- 1 tablespoon Madras curry powder
- 2 teaspoons Thai red curry paste
- 3 tablespoons soy sauce
- 2 tablespoons brown sugar
- 1 teaspoon salt, divided
- 2 14-oz cans coconut milk
- 2 tablespoons fresh cilantro, chopped
- 8 lime wedges

Steps:
- Heat 1 teaspoon sesame oil and 1 teaspoon olive oil over medium heat.
- Add fish and cook until just flaky (approximately 2 minutes per side).
- Remove fish from pan and keep warm.
- Add remaining oils to pan and reheat.
- Add bell pepper and green onions. Cook 1 minute.
- Add ginger and garlic. Cook 30 seconds.
- Add cumin, curry powder and curry paste and cook 1 minute.
- Add soy sauce, sugar, salt and coconut milk.
- Lower heat and bring to a simmer, stirring constantly.
- Return fish to pan and simmer for 2 minutes.
- Add cilantro and serve with rice and lime wedges.
