Stuffed Mushrooms
Serves 4
|
Ingredients:
- 20 medium brown mushrooms
- 1 lemon, juiced
- 3 tablespoons Sylverleaf olive oil, divided
- 1 clove garlic, minced
- 1 medium shallot, minced
- 2/3 cup bread crumbs
- ½ cup Parmesean cheese, grated
- ¼ cup parsely, finely chopped
- ½ teaspoon fresh oregano, finely chopped
- 2/3 cup Sherry

Steps:
- Preheat oven to 350°F.
- Place mushrooms, cap down, on a cookie sheet, coated with olive oil.
- Squeeze lemon juice onto the mushrooms.
- Remove stems from mushrooms, then mince the stems.
- Saute stems, garlic and shallot over medium heat in 2 tablespoons olive oil for 3-4 minutes.
- Mix bread crumbs, cheese, parsely, oregano and stem mixture.
- Add Sherry and stir until well mixed.
- Top mushrooms with a heaping of the stuffing mixture and drizzle oil over the top.
- Bake 10 minutes or until the stuffing is browned.
