Stuffed Mushrooms

Serves 4

Ingredients:

  • 20 medium brown mushrooms
  • 1 lemon, juiced
  • 3 tablespoons Sylverleaf olive oil, divided
  • 1 clove garlic, minced
  • 1 medium shallot, minced
  • 2/3 cup bread crumbs
  • ½ cup Parmesean cheese, grated
  • ¼ cup parsely, finely chopped
  • ½ teaspoon fresh oregano, finely chopped
  • 2/3 cup Sherry

Steps:

  1. Preheat oven to 350°F.
  2. Place mushrooms, cap down, on a cookie sheet, coated with olive oil.
  3. Squeeze lemon juice onto the mushrooms.
  4. Remove stems from mushrooms, then mince the stems.
  5. Saute stems, garlic and shallot over medium heat in 2 tablespoons olive oil for 3-4 minutes.
  6. Mix bread crumbs, cheese, parsely, oregano and stem mixture.
  7. Add Sherry and stir until well mixed.
  8. Top mushrooms with a heaping of the stuffing mixture and drizzle oil over the top.
  9. Bake 10 minutes or until the stuffing is browned.
