Serves 4

Ingredients:
- 1 pound boneless pork shoulder
- 2 tablespoon Sylverleaf olive oil
- 1 red pepper, cut into 1/2" pieces
- 1 large tomato, chopped
- 1/2 cup yellow onion, chopped
- 4 cloves garlic, minced
- 2 28-oz cans hominy
- 1 4-oz can diced green chile peppers
- 1 tablespoon chili powder
- 1/2 teaspoon dried oregano, crushed
- 2 14-oz cans chicken broth
- Tortilla chips
- Sour cream

Steps:
- Trim fat from meat, then cut into 1" cubes.
- In a large skillet, brown pork in olive oil. Drain fat.
- Place pork into a 4 quart slow cooker. In this order, add red pepper, tomato, onion, garlic, hominy, chile peppers, chili powder and oregano. Pour broth over all.
- Cover and cook on low heat for 8-10 hours.
- Serve with chips and a dollop of sour cream.
