Peanut Sauce

Serves 6

Ingredients:

  • ¼ crunchy peanut butter, heaping
  • ¼ soy sauce
  • ¼ lime juice
  • ¼ rice wine vinegar
  • 3 tablespoons cilantro, finely chopped
  • 1 tablespoon sugar
  • ½ cup coconut milk

Steps:

  1. Warm peanut butter over low heat in a sauce pan, stirring constantly.
  2. Add soy sauce, lime juice, and rice vinegar to pan. Cook for 1 minute.
  3. Add cilantro and sugar. Stir until all ingredients are completely mixed.
  4. Add coconut milk and stir until combined.

Refrigerate any leftover sauce.
