Sylverleaf Olive Oil
 

Oven Roasted Squash

Serves 6

Ingredients:

  • 1 large winter squash (about 3 pounds), peeled, seeded and cut into 1" pieces
  • 3 tablespoons Sylverleaf olive oil
  • 2 teaspoons salt
  • ½ teaspoon ground pepper
  • 4 garlic cloves, thinly sliced
  • 2 tablespoons parsley, chopped

Steps:

  1. Preheat oven to 400°F.
  2. Toss squash, olive oil, salt and pepper in a large bowl.
  3. Place onto a large baking sheet and bake approximately 30 minutes, stirring occasionally.
  4. Add garlic, then bake an additional 10 minutes, or until squash is tender.
  5. Top with olive oil and parsley then serve.
