Oven Roasted Squash
Serves 6

Ingredients:
- 1 large winter squash (about 3 pounds), peeled, seeded and cut into 1" pieces
- 3 tablespoons Sylverleaf olive oil
- 2 teaspoons salt
- ½ teaspoon ground pepper
- 4 garlic cloves, thinly sliced
- 2 tablespoons parsley, chopped

Steps:
- Preheat oven to 400°F.
- Toss squash, olive oil, salt and pepper in a large bowl.
- Place onto a large baking sheet and bake approximately 30 minutes, stirring occasionally.
- Add garlic, then bake an additional 10 minutes, or until squash is tender.
- Top with olive oil and parsley then serve.
