Italian Style Meatballs
Serves 6

Ingredients:
- Cooking spray (Olive oil in a Misto works great!)
- 2 pounds ground beef
- ¼ cup Sylverleaf extra virgin olive oil
- ½ cup Parmesan cheese, grated
- 1 cup bread crumbs
- 1/3 cup fresh parsely, finely chopped
- 3 tablespoons fresh oregano, finely chopped
- ¼ cup tomato paste
- 1 teaspoon fine, dry mustard
- ¼ teaspoon salt
- ¼ teaspoon pepper
- 2 cloves garlic, minced

Steps:
- Place all ingredients in a large bowl.
- Coat hands with cooking spray, then mix all ingredients.
- Form meat mixture into 1" balls and place on an ungreased cookie sheet.
- Fill wide saute pan with ¼" of olive oil.
- Heat olive oil over medium-high heat (do not allow it to smoke), then brown meatballs, turning frequently, about 4 minutes per batch. Turn out meatballs to a baking sheet covered with paper towels.
- Serve with a marinara or in soups.
