Italian Style Meatballs

Serves 6

Ingredients:

  • Cooking spray (Olive oil in a Misto works great!)
  • 2 pounds ground beef
  • ¼ cup Sylverleaf extra virgin olive oil
  • ½ cup Parmesan cheese, grated
  • 1 cup bread crumbs
  • 1/3 cup fresh parsely, finely chopped
  • 3 tablespoons fresh oregano, finely chopped
  • ¼ cup tomato paste
  • 1 teaspoon fine, dry mustard
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 2 cloves garlic, minced

Steps:

  1. Place all ingredients in a large bowl.
  2. Coat hands with cooking spray, then mix all ingredients.
  3. Form meat mixture into 1" balls and place on an ungreased cookie sheet.
  4. Fill wide saute pan with ¼" of olive oil.
  5. Heat olive oil over medium-high heat (do not allow it to smoke), then brown meatballs, turning frequently, about 4 minutes per batch. Turn out meatballs to a baking sheet covered with paper towels.
  6. Serve with a marinara or in soups.
