Grilled Lamb Chops

Serves 4

Ingredients:

  • 1 1/4 pounds lamb chops, trimmed of fat
  • 1/2 teaspoon salt
  • 3/4 teaspoon fresh rosemary, minced
  • 1/4 teaspoon black pepper
  • 1/3 cup cherry preserves
  • 1 medium shallot, sliced
  • 3/4 cup balsamic vinegar
  • 1/8 teaspoon peppercorns

Steps:

  1. Preheat grill to 375°.
  2. Coat chops with salt, 1/2 teaspoon of rosemary and pepper.
  3. Place on grill rack coated with cooking spray.
  4. Cook for 3-4 minutes on each side.
  5. Simmer preserves, shallot, vinegar, remaining rosemary and peppercorns in a 1 quart nonreactive saucepan (no aluminum or uncoated iron) over medium heat until syrupy, about 8 minutes.
  6. Add chops to saucepan and cook, uncovered, for 2 minutes and serve.
