Grilled Lamb Chops
Serves 4
|
Ingredients:
- 1¼ pounds lamb chops, trimmed of fat
- ½ teaspoon salt
- ¾ teaspoon fresh rosemary, minced
- ¼ teaspoon black pepper
- 1/3 cup cherry preserves
- 1 medium shallot, sliced
- ¾ cup balsamic vinegar
- 1/8 teaspoon peppercorns

Steps:
- Preheat grill to 375°.
- Coat chops with salt, ½ teaspoon of rosemary and pepper.
- Place on grill rack coated with cooking spray.
- Cook for 3-4 minutes on each side.
- Simmer preserves, shallot, vinegar, remaining rosemary and peppercorns in a 1 quart nonreactive saucepan (no aluminum or uncoated iron) over medium heat until syrupy, about 8 minutes.
- Add chops to saucepan and cook, uncovered, for 2 minutes and serve.
