Sylverleaf Olive Oil
 

Butter

Serves 4

Ingredients:

  • 1 pint heavy cream
  • ½ teaspoon sea salt

Steps:

  1. Combine cream and salt in mixing bowl of a stand mixer.
  2. Using a whipping attachment, mix the cream and salt at high speed. Mix about 4 minutes past the "whipped cream" stage. The cream will change color slightly and begin to resemble scrambled eggs.
  3. Remove mixing bowl from mixer and fill with cold water.
  4. Under cold running water, massage the ball of butter until the water runs clear.
  5. Wrap butter in parchment paper and shape to your liking. Store in refrigerator.
