Butter
Serves 4
|
Ingredients:
- 1 pint heavy cream
- ½ teaspoon sea salt
|
Steps:
- Combine cream and salt in mixing bowl of a stand mixer.
- Using a whipping attachment, mix the cream and salt at high speed. Mix about 4 minutes past the "whipped cream" stage. The cream will change color slightly and begin to resemble scrambled eggs.
- Remove mixing bowl from mixer and fill with cold water.
- Under cold running water, massage the ball of butter until the water runs clear.
- Wrap butter in parchment paper and shape to your liking. Store in refrigerator.
