Braised Artichokes
Serves 4-6
|
Ingredients:
- 4 large shallots, halved
- 10 baby artichokes
- 3 tablespoons Sylverleaf olive oil
- ½ cup vegetable broth
- ½ cup Madeira wine
- 2 tablespoons parsley, chopped

Steps:
- Remove the tough outer leaves from the artichokes. Cut the top 1/3 off of each artichoke. If necessary, trim the stems also.
- Place olive oil into a large pan and heat over medium high until hot.
- Saute shallots and artichokes until the shallots turn golden brown.
- Add wine to cool, then the broth.
- Cover and simmer 15-20 minutes or until the artichokes are almost tender.
- Uncover and cook over medium heat until the liquid is mostly evaporated.
- Top with Sylverleaf olive oil and parsley.
