The Manzanillo Olive Tree
This variety is from the oldest parts of our orchards. It is a very feminine tree;
soft, whispy, very beautiful and shorter in stature. These trees tend to grow fairly
quickly and sprout suckers incessantly. The Manzanillo fruit are very round and rather
large in size, which makes them very good for curing or for oil. These olives ripen in the early
season and are usually very black by the time that we start our harvest in mid-November.
Manzanillos are very reliable producers and yield around 17% oil content by weight.
Flavors
The flavors of the Manzanillos can be described as an astringent green flavor with
marked pungency and bitterness in the early season. This turns to a sweet and smooth
oil with a marked astringency and an earthy quality in the late season.
