The Hojiblanca Olive Tree
This olive tree is really one of the most beautiful trees that there is. It is a weeping
tree that has dark green leaf tops and silvery-white undersides. When the wind blows,
these trees give a bright flash as the leaves move. The fruit is of a medium size with
lots of "meat." The Hojiblanca olives are harvested in late November to mid-December,
just as they are becoming fully ripe. Olive oil yield is also acceptable at around 17%
by weight.
Flavors
The Hojiblanca olive oil has a very smooth aroma, a woodsy character, a slightly sweet aftertaste and a heavy mouthfeel.
This varietal has an elegant, seasoned flavor followed by a green fruity finish (think apples, almonds and olives). Delicious.
