2005 Harvest
2005 stands out for the sheer volume of oil produced from the olives. We averaged about
43 gallons per ton of olives, which is very respectable for an early harvest. It seemed that
we had back to back storms in December and January that blew a large amount of olives to the
ground. If I was forced to guess, I'd say that we lost 25% of the crop due to wind and heavy
rain.
