Can You Smell It?
A very important factor for an olive oil is the aromas that are present. This
attribute will vary from year to year due to the influence of weather on the
growing habits of the trees and the developing olive fruit. The greener smells
in an oil come from the fruit that has been picked early in the harvest season,
while the softer, sweeter smells come from late harvest olives. You may notice
a wide range of aromas in Sylverleaf olive oils. This is because we harvest
throughout the entire season, from mid-November through late-January, in order
to incorporate the young green olives, the half green and half purple olives,
and the late harvest purple and black olives. This extra effort guarantees that
you get a complex and versatile olive oil.
