What Does Color Show?
Contrary to popular belief, the color of an olive oil is not important, nor
is it an indicator of quality. An oil's color might indicate when it was picked
(early season vs. late season), but most oils will turn to a golden yellow hue
over a short period of time in the bottle. In official olive oil tastings, the
oils are served to the judges in blue glass cups so that the evaluation of the
oil is not skewed by color.
That being said, Sylverleaf olive oil will be green in color around harvest
time, but as the oils mellow, the color is best described as a golden yellow.
Is Cloudy OK?
Sylverleaf uses natural decantation rather than filtration when processing our
olive oils. Decantation leaves the oil a rich golden color that has some
cloudiness. This cloudiness is the result of some small pieces of olive flesh
that are suspended in the oil. Some of this olive flesh may accumulate at the
bottom of the bottle. This is especially true of our new oil,
Verde. Decantation
preserves all of the flavor and smell, as well as the vitamins, minerals and
polyphenols, so that you can enjoy a delicious and healthy all-natural product.
