What Makes an Olive Oil Good?
All olive oils are not made alike. You should use all of your senses to
evaluate an olive oil. If you can put them all together, you'll have no trouble

Use Your Senses
Your ears may not get directly involved, but talk with your friends, with your
local purveyor of finer foods, or with your favorite olive oil maker to get their
opinions and recommendations.
Your sense of touch can be used to examine the care that the olive oil maker has
put into the packaging of the oil. A thick, dark glass bottle shows that the extra
thought has been put into preserving this delicate natural product.
