What Makes Sylverleaf Special?
An olive oil can only be as good as the olives that go into it. Here in the small
California town of Loma Rica, the shallow soil and extreme seasonal weather are
ideal for growing premium olives. Sylverleaf extra virgin olive oil has all of
the character and complexity of this unique region.
We maintain the full flavor and freshness of our oils through exact and time-honored
traditions. The small batches of oil are kept separate by harvest date and by
orchard location, then allowed to decant naturally. This preserves all of the
flavors and health benefits that are inherent in a true extra virgin olive oil.
We taste each batch of oil, evaluate it on a 15-point scale and match it with
other batches of our oil in order to create the blends for the year.
After blending, the oil is stored in large containers, rather than bottled
immediately, in order to minimize exposure to air and light. These are the
two biggest factors that cause deterioration of an olive oil. Once bottled,
the oil is protected by our heavy, dark green glass bottles and premium corks.
The oil is always stored at an optimum temperature and out of the light until
it is delivered to you.
