The Arbequina Olive Tree
This olive tree is quickly becoming the most numerous olive tree in the US. It is a weeping
dwarf variety that is typically grown on a trellis system. The fruit, just like the tree,
are very small, being about the size of a large sweet pea. Many olive oil makers
harvest this variety in early- to mid-October, but we wait until late November,
when the fruit is more ripe. These trees really load up with olives
and are actually fun to harvest. Olive oil yield is also quite good at around 21%
by weight.
Flavors
The oil made from Arbequina olives tastes of almonds, green apples, tomato leaves
and green vegetables. It is very smooth in the mouth with a sweet finish. The most
powerful flavors tend to fade since this oil oxidizes more easily than others.
